There is nothing like a good BBQ and whenever we BBQ at my house we like to add Grilled Pineapple to the menu. It’s a sweet delicious treat that goes well with Steak, Chicken, Ribs, whatever. Plus it’s easy to make and relatively good for you, I mean it’s pineapple, it’s a fruit, it’s healthy!
- 1 Organic Pineapple Cut in to Spears
- 1/2 Cup Brown Sugar
- 1/2 Cup Organic Coconut Oil (melted)
- 1 Teaspoon Cinnamon
- 1/2 Teaspoon Vanilla
I like to start a few hours before I actually grill the pineapple and remove the crown of the pineapple then turn the pineapple upside down for two or three hours. The idea is the sugar in the pineapple settles to the bottom of the pineapple, by turning it upside down for a couple it hours it allows the sugar to filter back throughout the pineapple making it sweeter.
Then, when you’re a few minutes out from grilling, mix the Coconut Oil, Brown Sugar, Cinnamon, and Vanilla together. Stir this mixture together very well and then bast the pineapple spears with it.
Grill the Pineapple Spears for 7-10 minutes rotating every once in a while so it doesn’t burn. You should also keep basting the spears with the extra sauce as you rotate the pineapple spears. You’ll know they’re done when they start turning golden brown.
Serve warm and enjoy!
